Sweet potato and black bean bowl: Ingredients and variations

This bowl offers a good mix of fiber-rich complex carbohydrates, plant protein, and vegetables:

Sweet potato:  Provides complex carbohydrates, fiber, and beta-carotene, which the body can convert to vitamin A. You can substitute sweet potatoes with other root- or nightshade-free vegetables, such as pumpkin or butternut squash. For added variety, try roasted sweet potatoes with different spices or swap in cooked squash for a different flavor profile.

Black beans: Add plant protein, fiber, folate, iron, and other minerals. Their fiber also makes the meal more filling. You can also use other types of beans, such as white beans, fava beans, red beans, or pinto beans.

Broccoli: Supplies fiber and vitamins C and K, plus folate.Substitute broccoli with other cruciferous vegetables such as Brussels sprouts, cauliflower, kale, or cabbage.

Red onion: Adds fiber and plant compounds, including antioxidants.

Quinoa: Provides a complete source of plant proteins, fiber, and essential minerals. You can have yellow or green onions instead.

Carrots: A good source of vitamin A, fiber, and antioxidants. You can substitute beets, radishes, or turnips for carrots.

Avocados: Supply healthy fats, fiber, potassium, and vitamins. You can add black or green olives instead of avocados
